It's possible to replace the manifolds in the truck. Only difficulty is when the bolts break and they have to use the torch to heat up the manifold to get them out... It would certainly be easier if the motor was out, but not necessary by any means.
And not sure about those bolts... Rockauto didn't have anything for my 99. I have 6 on each manifold, yet that link you included has 10. Not sure if the bolt size and thread pitch changed or not. Haven't even gotten to the point of measuring mine yet. Was just going to run to a local bolt company when I was ready to put new manifolds on.
