Default 2002 ford ranger 2.3l

I'm having an issue with my 2002 ford ranger xlt 2.3l. After driving it on the freeway for 5 minutes the temperature gauge spikes into the red and about 1 minute later it returns to normal. Some times it goes into limp mode so I have to turn off the engine and start it back up and it runs normal after that. Then a few minutes later it does the same thing. So far Ive replaced the thermostat, the water pump, heater core, expansion tank and the temp sensor on top of the motor. pressure tested with no leaks. does anyone have any suggestions?

Did you pull the cluster to check the gauge? or the wiring from the gauge to the temp sensor?

The sensor on the head is called a Cylinder Head Temp Sensor, it has a low and high range signal that it sends to the ECU so it can monitor engine temp.

Are you absolutely sure there is no air in the system, at all? Have you checked to see if there are any "deep" codes present in the system after this error happens?

Which thermostat are you using, and is it a FoMoCo replacement or aftermarket? The cooling system in the early 2.3 NS rangers is a bit finicky/.
