What is your dash voltmeter saying when it does this? And have you had the voltage tested? My 03 did something similar where headlights and dashlights would "pulse."

After checking every ground, every fuse, replacing the battery, checking the connections on my head unit the only other thing i think it could have been was the alternator because it still wouldn't...

I don't think so, it doesn't matter the pressure I apply to the pedal. Almost like they are dirty but I keep them clean. That's why I'm thinking its not getting fluid or I have air in my lines.
