Default BBQin' + Grillin' Tips and Recipes

so i want to do alot more bbq this year! i bbq some chicken yesterday and found that i was charring them before they were ready, probably because we were using a grill meant for gas with charcoals lol the charcoal was realy close to the chicken


anyways ANY tips, any recipes would be fucking awesome!


and any tips on using charcoal? i prefer charcoal and id rather keep using my gas bbq. the charcoal bbq has a really rusted out grill

My sister in law bought me a "how to grill" cookbook that has a ton of great tips and recipes in it. http://www.amazon.com/How-Grill-Complete-Illustrated-Techniques/dp/0761120149
I bought an original weber charcoal grill last year and its the bee's knees. Use a charcoal starting chimney to get the coals going, no need to use lighter fluid and its faster. Works awesome.

As far as BBQ'ing theres a difference between grilling and BBQ'ing. Grilling is hot and fast, BBQ'ing is slow and low, mostly indirect heat is used. I grill alot in the summer, alot of chicken, pork and of coarse steak. My favorite is Open Pit BBQ chicken legs. I season teh legs with garlic salt, seasoning salt and pepper and get the grill medium/hot and grill the chicken plain until the skin starts to get crispy then start covering them with the sauce. I like a bit a char on my chicken so I will let the sauce char a little before putting on the final coat of sauce. Im also a fan of beer can chicken. It takes about 3 hours on indirect heat and I use a rub recipe I got from that book I posted above.

shoot i did the chicken legs yesterday, liek 20 of them , took 40 mins the outside was charred but well cooked but some of them when you got to the bone it was still a little bloody which is bad! lol i suspect it was because it was on the side so i will try next time to move them around more and level the charcoals better

Yeah, because of the un even heat of charcoal I move mine all around in the grill. Ive found that once the outside is seared well to seal the juices in I can cook them longer and still be juicy.

Another thing I like to do depending on what Im cookng is to throw some mesquite or apple wood chunks on the coals to get a good smoky flavor.

thinking about that, what brand? walmart has cheap 2 lb bags for liek 5 bucks...seems too cheap?

For the wood? No brand in particular. I buy the big chunks, not the chips and if they are too big I split them with a hatchet. Ive found apple wood is great for pork and chicken and mesquite is great for beef. The mesquite is a little heavy for the white meats IMO
