Question: What would happen if I bypassed this and put unions in to connect the rear brake lines?

sometimes these are designed to hold a few psi of fluid back against the wheels. helps with brake pedal feel. id double check them before bypassing. look inside the holes for anything other than an open through hole

Sometimes those blocks act like proportioning valves. I would watch just bypassing them. Most vehicles have a 60-70% front to 40-30% rear bias. Bypassing could cause lockup problems with the rear wheels.
