What I mainly do personally is set up CNC mills and lathes, program and run them. Also use many other tools and machines occasionally, including surface grinders, welders, etc. Basically I make parts from drawings in a job shop.

I usually pick up work that other contractors have messed up on so really I do it cheaper and fix problems

I don't have to worry about insurance with side work I do cuz it's not that risky but the actual business I work for, my boss broke a 5 inch gas mainline in this millionaire neighborhood cuz the people that marked the gas lines marked in the wrong spot but it costed our insurance company $50,000 (that's what I was told)

Not engineering, but to become licenses yes there is some schooling. You need to do an apprenticeship which is mostly in the workplace hands on experience. And it's paid.

shit. That's deadly right there. It's just small side work. But if your competent about what your doing and make sure it's all to code your good

What I do on the side is like mulch, planting stuff, making flower beds, but mainly mowing so nothing risky... The actual company well we do boulder walls, retaining walls, patios, porches, the stuff I do, trimming, sod (it sucks!), etc. but some of that stuff can be risky in the sense if we break anything we will get sued...
