If the sway bar is good then your truck would sway 4x more without it connected/broken. So whatever rolling it's doing around corners or "jerking the wheel back and forth" is just from being so high over stock, as mentioned earlier:

If the shock swap makes no difference, considering any performance brand of shock (Bilstein, Pro Comp, Fox, Rancho, etc) will be much stiffer than a Motorcraft shock, then "it's just like that"
