don't know your trucks all that well, but here in south Africa we do the following:
Replacement bumper - get rid of the plastics and fit some steel up front
Lift it and fit proper suspension
Tyres very important - don't bother with all terrains if you intend driving proper off road, go straight to mud terrains
snorkel - optional, but usefull for water crossings and looks cool - I have had water above the bonnet on more that one occasion
some spotlights up front always help - I have the lightforce 170's and they outshine any other spotlight available
the possibilities are endless, all depends how much time you have and how much you want to spend...
BTW on the bumper thing, I have hit a cow in the road at 90km/h at night (60 mph) - bumper damaged, but I drove the remainder of the 300km home, replaced the bumper (insurance) and that was that, no damage to radiator or anything else - had to replace a headlight as well - mountings broke... :-)
