Default Cooling system question

Cooling system question

Hi every one
Happy new year to every one.

I try to fix a problem on my ford ranger 1997 2,3l xlt .
Here is my problem.

When i drive my car in a mountain,
The temperature goes up , and the liquit in the coolant reservoir boil
but when i stop and i accelerate stationary,
The temperature goes down immediately.

My waterpump work, my fans works, .....

I use to put water in the cooling system , i change after i have the problems.

Any one have advice to fix it .
