Questions:
About how much would my odometer be off by?
Regearing from what to what? How do I know what gear I have now, and how do I know what to regear to?
Is it easy enough to regear? Or not worth the effort?

Your speedometer and odometer are off by the percent difference between you stock tire and your current tire overall diameter.
Depending on your engine size and gear ratio (found on door rage or axel tag), regearing probably isn’t necessary for 31” tires.
It can be very expensive expensive to regear, especially if your truck is 4wd.
You can, however, correct your speedometer and odometer without regearing. This can be done with a hand held programmer/tuner or, since 31” tires were a factory option on some trucks, a dealer should be able to correct it as well.
