I have a friend that did away with the cat on his camaro and just got an o2 sensor eliminator. Its a thing thats plugs into the connector where your o2 sensor plugs into and makes the computer think there is actually an o2 sensor so your check engine light doesn't come on. He has had it like that for a few years and no engine light and he passes inspection every year with no problems.

He said he got his online but cant remember where. You could do a search for them and see what comes up.

U could just gut them. I did this to my cat that is before my o2 sensor and didn't throw any codes. But idk what it would do on your motor. Just a thought...
