does moving the temp guage not chage the air coming in at all?

Also, does your AC work on max only?

If yes to both, it is probably the all popular blend door problem

even tho the thermostat is stuck open, the truck would eventually produce heat. You should grab ahold of the radiator and heater core hoses to see if they are hot. This would narrow down the problem. If there hot, then your temp sensor is prolly bad. If they are hot and you get no heat then your heater core is prolly plugged. If none are hot or even warm then you are prolly overcooling/not circulating check you clutch fan to see if its not locked up. If your not circulating and your temp sensor is bad you wont know that your overheating until its too late. How far are you driving the truck? 10-20-30 miles? or only a couple.

Allready fixed the problem, was the thermostat. Replaced it and now the gauge is working, but thank you for the help.
