How hard is it to swap those? And about how much in used good to new shape?
What is the advantage of the 31 vs the 28 spline?

What is the advantage of the 31 vs the 28 spline? | well if you get one out of a fx4 ranger it will be a direct bolt in, and if you get one out of an explorer you may have to move shock mounts (i did but mine also runs 8" of lift and a custom set up).
The benefit of the explorer rear end is that you will now have rear disk brakes instead of drums which stop much slower...
Also the benefit of a 31 spline (correct me if i'm wrong) is that there is more contact surface on the gears, and it can handle a little bit more abuse than the 28 spline.

Without needing to open my yolk?

I have an aussie auto locker in the front on mine. I will be removing it actually. It works great off road and so far is just as good for low speed plowing. I find high speen road driving is not the best but tolerable.
