Default over heating

I am having a heating problem. As I drive the temp. goes from cool to hot up and down. Sometimes it will stay hot for several minutes then drop back to cool only to start going back up. I am loosing water somewhere in this madness. It doesn't seem to be leaking out when I'm parked, no spots or drips.
Has new rad., water pump, hoses, & belt. I have taken out the thermastat and gutted it so there is only a metal ring and a gasket. It didn't help. Can anyone please help? and looking for a cliff to give it a push off of!

Why would you take out the T-Stat? Now you have to buy another new one for anything to work properly. Nice job. If you've already replaced everything and already topped off the coolant levels, then it sounds like you have a head gasket leak.
