Bigger diameter tires is the same as putting a higher gear in the rear end. Opposite is true. You will quickly feel a difference in acceleration as soon as you drive it.

Your rim size means nothing, what matters is the tire size. If you run low profile tires on a 20" rim that end up the same overall height as your standard tires on a 15" rim there will be no difference except your truck will look dumb.

For example a 20" rim with low profile tires that have a 4" tall sidewall = 28" and 15" rim with standard tires that have a 7.5" tall sidewall = 28" so there is no change in gearing.

But larger tire = higher gear. You will lose low end torque and gain highway speed.

Okay I thought higher gears gave you faster acceleration and lower gas mileage and lower top speed.. so as long as my overall tire is smaller then 28 or so inches I'm really getting smaller tires?

Higher gear = lower number. Example 3.08 would be a high gear while 4.10 would be a lower gear. Taller tire = higher gear.
