On most engines ,the oil pump has a check valve built in to regulate pressure at a set PSI threshold like 40-60psi. It could be stuck closed and not allowing pressure to bleed off back into the oil pan. The dipstick thing ,being popped off is something else and not excess oil pressure. excess blowby might ,if your rings are bad or PVC valve is not working.
If you changed the sender and there wasn't any change the only thing I would guess would be spun bearing and I say this because I had this happen to me once on Pontiac GTO, Spun a Cam bearing and my oil pressure went to 90psi. This is just a shot in the dark though!!
One more thing you might check is if you have the correct oil filter.
