Cool Simple but lost?

Well we replaced our thermostat on our ranger today, but the old thermo was a motorcraft which had the temp engraved on the piece (92 degrees-106) now the new one we purchased was (192 degrees-195) why is this? We purchased it from pepboys and called them back to tell them that the one that was on the truck was different then the one they sold us. They said that that degree was impossible. Well since we changed it, we realized that when we turn the truck off, the temp gauge stays elevated and after awhile of cooling, we turned the truck back on, it resets. I truly can't remember if this ever happened before we changed it but I dont believe this is normal. Any ideas on what might have happened?

2002 Ford Ranger FX 4x4 XLT
4.0, 5 speed Manual Transmission
