Unhappy 2.3 idles but dies when gas is pressed

Ok guys I need to pick someone's brain I have a problem my truck will start and run but when I press the gas most of the time it gets real jerky like it's out of time but it's not but if you increase throttle very slowly it will rev I just can't figure it out any help is appreciated

I would check the MAF. When they get a bit of 'stuff' on the elements, they send incorrect information to the computer, resulting in incorrect fuel injection. It seems just a tiny speck of 'stuff' can throw off the measurement.

When was the last time it was tuned up, and the fuel filter changed.

Check for vacuum leaks as well.

I don't know when the last time it was tuned up I am going to try a fuel filter I've been looking for vacuum leaks but to no avail

Before doing the fuel filter, check fuel pressure and delivery volume. You can 'rent' a gauge from multiple auto parts stores, then return it unbroken if desired.
Power the pump, and divert fuel into a container for a measured time. Calculate flow using the volume and time. If reasonable, it is not likely the cause.
If you can climb a good long hill, ditto. Lack of fuel will cause you to lose power as the delivered fuel becomes less and less, leading to a lean mixture.

I haven't measured flow but the pressure is good and I can't even move it as soon as I let the clutch out it dies

Maybe check the TPS... throttle position sensor. If it is broke, the throttle plate can open but the computer not know, and thus not add fuel.
