Default 87 2.3l rough idle then dies

Just got this truck today. This problem is intermenten said the previous owner. I drove it home and had no issues until I got home. It will rev up and drop idle so low it dies can turn key off and fire it right back up and it'll run good until it acts up again. I have been trying to check the codes but truck has no engine light I tried jumping the connector and checking with miltimeter. If someone could verify how to correctly do it. All I have is a digital multimeter so I get quick spikes not sure if it's correct. I will get an analog if I have to. Any help would be appreciated. I'm not familiar with the 2.3 but I am mechanicaly enclinded. Thank you.

The IAC can and will diddle with idle speed. Sticky, gummy, or dirty IAC may cause the problem.
The MAP sensor, a cigarette package sized box with wires and a vacuum line attached will make the idle crazy.
If the fuel pressure regulator fails, it can fail rich or fail 'lean', with too-high or too-low pressure supplied. I make the assumption you have EFI.
You may be able to find a Ford-specific tester that uses a 9-volt battery and plugs into the EEC-IV connector. They were ~$30, but now go for about $10. Worth it, to test and for the explanations in the accompanying manual.
You may be able to pull codes and have them displayed on the instrument panel as some vintages had that feature. Check with the Ford web site for an owners manual in PDF format, which might have the instrux.

The map would be under the removable plastic cover on the passenger side, rearward of the battery. There's a push-pin retainer and a couple 'legs' holding it. Pull the center pin, and the fastener can then be removed. The MAP sensor has wires(3?) and a vacuum line connected. It senses engine load(vacuum) and reports to the computer to nudge fuel lean or rich, depending on load. They can go whacko, and the idle will be as stable as a pachyderm balancing on a bowling ball. To say, not at all. I think you can disconnect it, or disconnect and plug the vacuum line temporarily, and the idle should somewhat smooth out if the MAP is really nuts.
