Default strange overheating issue

2000 ford ranger 4.0 it starts out let the truck warm up for a few every thing is fine have heat and temp gauge is normal. replaced t stat about 3 weeks ago. whyle driveing down the rd the heat all of a sudden goes to cold and the temp gauge slams to cold and then starts going back up heat is still cold then the gauge is in the red so i pull over and pop the hood top and bottom rad hoses are cold and rock hard lots of pressure in em. well i leave truck runing and after 50 sec the temp goes back to normal and heat blows warm again top and bottom hoses are warm and soft again.. also noticed 2 days before i was checking fluids and over flow tank was about half way filled well after it did this the thing was all the way full it overflowed.. it also did this again after driveing back home from work.. any ideas the only thing i can thank of is replace the t stat again and new rad cap
