Just once or does it do it every time you turn on the heat?

do you loose heat when the gauge goes up? I guess the thing to find out is if its getting hot because of lack/blockage of coolant, or just that the coolant is getting that hot.

Heat or no Heat will tell you this.

maybe just your temp sensor.

maybe the clutch fan is locked up, when I installed my flex fan my temp will go up and down because the fan cools faster than what the thermostat can stay open and closed.
