Sorry for the dumb question. Looks like I'm leaking a bit of coolant from the valve. Going to replace it - is coolant stored in those hoses or am I OK to replace it without having to plug all 4 hoses or drain coolant?

You will loose a bit of coolant. I replaced mine and just added some to the storage tank. You will be fine.

Since you will have the valve out, flush out the heater core too.
Ain't no telling how nasty a 23 year old heater core may be.
