Default 4.0 OHV Coolant extremely cold

For starters, I've got a 2000 Ranger XLT 4x4 ORP. I've noticed lately that it's been running extremely cold. At first I didn't think much of it, as I've noticed the temp gauge is slightly off. To be safe, I talked with a UPS mechanic buddy of mine, he said not to worry, that at most it would effect my MPG. Earlier this morning I drove it at highway speeds for about 30 miles and it barely cleared 140 Fahrenheit. My heat it working just fine and the truck seems to operate just as well, both while driving and at idle. It's not throwing any codes, but just the other day it tossed up 2 lean codes indicating the MAF was tripped. I deduced that that code was caused by my girlfriend taking it to get groceries after I had taken the air filter out to clean and had not yet replaced it because it was drying. I'm kind of dumbfounded... It's not terribly cold here in NW Arkansas (about 40 F) and the truck and heat both function well. Anyone know what might be causing this? Do I have a faulty temp gauge? Or maybe the most efficient cooling system ever? Lol sorry for the long read, but any help is appreciated!

T-stat issue, replace with a Motorcraft for best result and make sure colling system completely urged of air. As for codes, please post the actual code #; A lean code need not automatically mean MAF, readers need to code # to evaluate the situation and reply.

Well, I replaced the tstat and that fixed that issue. I cleaned the MAF sensor and cleared the codes, 36 hours later and they haven't popped back up yet. I just want to say thanks for you help fellas! Hope y'all had a great thanksgiving!

Sorry man, I thought I responded to this the other day. The codes in question were P0171 and P0174. As I said in the other post, I cleaned the MAF sensor and cleared them, they haven't showed up again as of now. I appreciate the help and I'll let you know if they do show back up.
