That sucks. Sorry to hear. I just did the heads recently on my '95 3.0. It's really pretty straight forward. Took me about 3 days. So plan on your truck being down at least that long. Maybe even a week.

If I were you I'd be rebuilt heads. Theres a guy on eBay that sells them. If you do a search for 3.0 heads on eBay, it should come up. I think it's called dorman machine shop? Something like that. They're only $200 shipped fully cleaned, checked, and new seals. Having your heads done at a machine shop will cost at least that much. And I wouldn't do a headgasket job without going through the heads. I wouldn't buy the gasket set they sell though - I'd go with at least Fel-pro quality.

Just take your time - put all the rockers, pushrods back in the order and position they were removed, oil them when reinstalling them.
