Make sure the level is reading within the hatch marks on the dipstick. That's more important than quantity.
Then again, I'm not sure that at idle if it's going crazy the problem is the quantity of oil. It may be the sending unit acting up; usually gauge problems are attributed to that thing. The gauge is just a dummy gauge anyway, and is not uncommon to fluctuate wildly in both directions. If you're concerned, use a manual gauge at idle in place of the sending unit to make sure. High pressure at idle is nothing to be concerned about though, as long as it's not extremely excessive.
But, the only reason pressure would increase at idle (which is a slower moving oil pump!) would be if there was a clog somewhere. I think the sending unit is on its way out, because when the ground connection goes it gets full voltage, pegging the gauge. Which sounds like what you're getting.
Oh yea, and just for precautionary measures, I'd change the oil filter. Maybe the filter is clogged somehow and reads high pressure until the bypass opens up. But if that was the case I'd suspect the pressure would be low until the bypass opened, but I suppose anything is possible!
