New tires and you want some of your performance back? There's really only a few good ways to do this, the best being a re-geared rear end.
I just recently went up to 31 in. tires on my '01 and a couple of weeks ago I upgraded from 3.73 to 4.11 gears and went back to the final drive ratio.
I think it's easiest to explain this by thinking of yourself riding a bike and going up a hill, by going to a lower gear it's easier to pedal and your legs have a higher RPM. Because you're pedaling more you're putting more energy into turning the wheel then you did before, the only downfall being you lose some top end.
This is just like what's going on in your truck, since you have bigger tires, you're spinning more mass and you need more torque to get going. However since you have bigger tires you're now going farther for each revolution. Changing the gearing in your rear end will give you back your performance by making the ratio of RPM's to distance traveled go back to what it was before, while allowing your engine to create more power by moving up in the power band by having a higher RPM.
I think I got that right...anyone correct me if I'm mistaken.
Long story short, re-gear it.
