Default Overheating with Full Coolant

Hello All!

Been quite some time since I have been on this forum, but I have recently developed an overheating issue with my truck that has me stumped.
A little history on the motor: I have a 2000 3.0 V6. I originally had issues with over heating due to a leaking freeze plug and a bad water pump which resulted in a blown head in December 2016. At that point I had a new motor, water pump, radiator, thermostat, and hoses replaced.
I have only put roughly 17k miles on it and have had no issues until recently when I noticed the truck will start to overheat while driving in traffic or in the city. I live and work on the outskirts of town, so I do mostly highway or backroad driving with no issues, but when I do have to go into town it will start to overheat. The coolant level is still full. There is a little bit of brown gunk under the radiator cap, but the coolant is still green. I couldn't imagine there being a water pump or head issue considering all that was replaced not that long ago. Possibly just a cheap thermostat going bad?
Any help is greatly appreciated as I am unsure what to look at.

Did you also replace the fan clutch

Or a faulty temp sensor... may show hot when its not

Also have you washed the radiator out from both sides?

Thanks for the input guys. I did not replace the fan clutch. So that might be the problem. I'll look into replacing that and seeing if that fixes it.

It's definitely not a temp sensor because I can drive all day with no issues until I get into traffic. Then it starts to overheat.

Definitely change the fan clutch and maybe a new expansion tank cap. Sometimes the seal goes bad and can cause issues.

I have a friend who is a mobile mechanic. He helps me with issues I don't have the time or knowledge to fix myself. Mostly the zillion small sensors and black boxes. He also owned a Ranger.
He warned me to buy Ford OEM parts for the truck.
He told me that he had to test four thermostats from a parts store before he finally went to the dealer.
He said that a large number of the common replacement parts like thermostats, ignition parts, belts and such are getting worse.
You might look at your thermostat, and if necessary test it in boiling water.
