This might sound stupid, but is it possible to put a head or a head gasket on the wrong side of the block and cause it to act like it wants to over heat or build up combustion?

But here's the thing though. When it running at idle, the top radiator hose has the normal amount of pressure. When I hit the throttle, that hose gets so much pressure on it that you can't squeeze it at all. If something is in the wrong way, would it actually cause that to happen?

its normal to build some pressure as rpms go up. Water pump is working
