problems finding right head gaskets

Hi. My dad has a 1989 Ford Ranger with a 2.9L V6. He recently had the heads reconditioned. When he attempted to reassemble he realized the head gaskets he had only had the water jackets open on one side. He has bought two sets for his truck and both sets looked identicle and when he reassembled the engine it dumped water into the oil pan both times. Can anyone give us an idea of what is going wrong.

Were the heads milled, and how much? Could be lower intake manifold gasket, since that is going to effect the relationship. I have ran into this before where a machine shop told me no, but actually the answer was yes after getting water in my oil after a rebuild. It's also noted in Sven Pruett's how to rebuild and modify ford 60 degree engines.

It could also be a set of cracked heads, that the shop did not find the crack. These tend to crack near the base of the rocker arm pedestal.
